Microwave Baked Potato

To make a fluffy baked potato quickly in the microwave.

Ingredients

  • 1 medium-to-large Russet potato (scrubbed clean and dried).
  • 1 tsp olive oil or melted butter.
  • Salt.
  • Black pepper.
  • Optional: Sour cream.
  • Optional: Chives.
  • Optional: Bacon bits.

Preparations

  1. Clean: Scrub the potato thoroughly and pat it completely dry.
  2. Poke: Use a fork to prick the potato 6 to 8 times all over. This is critical to allow steam to escape and prevent the potato from bursting.
  3. Coat: Rub the potato skin lightly with olive oil or butter, then sprinkle generously with salt and pepper.
  4. First Microwave Cycle: Place the potato on a microwave-safe plate. Microwave on HIGH power for 3 to 4 minutes.
  5. Flip: Using oven mitts or tongs, carefully flip the potato over.
  6. Second Microwave Cycle: Microwave on HIGH for another 3 to 4 minutes.
  7. Check Doneness: Insert a fork or knife into the thickest part. It should slide through easily to the center with no resistance. If it still feels firm, continue microwaving in 1-minute bursts.
  8. Rest: Remove from the microwave and let it sit undisturbed for 2 minutes—the internal steam finishes cooking the center.
  9. Open: Slice open, fluff with a fork.
  10. Optional Toppings: Add your favorite toppings, for example, butter, sour cream, salt, peper, chives, bacon bits.

Notes

  • To prepare multiple potatoes at once add about 1 1/2 to 2 minutes to each cooking time and 1/2 minute to burst cooking per potato.
