Pearl Diver Cocktail

• The classic Pearl Diver, combining two types of rum, an aged column-still rum and a rich Demerara rum, along with gardenia mix, fresh lime and orange juices, and aromatic bitters.
• Note: This cocktail requires pre-made Don's Gardenia Mix.

Pearl Diver (Spike's Breezeway version)

Ingredients

• 1/3 oz lime juice
• 1/2 oz orange juice
• 1/2 oz Don's Gardenia Mix
• 1/2 oz Demerara Rum
• 1 1/2 oz Cuban Column-still Gold Rum
• 1 dash Angostura bitters
• 2 scoops pebble ice (mixed in drink)
• More pebble ice to top drink
• Edible flower for garnish
• 2 more scoops pebble ice (mixed in drink)
• More pebble ice to top off.

Glassware

• Pearl Diver Glass.

Construction

• Into a shaker add lime juice, orange juice, Gardenia mix, Demerara rum, Cuban gold rum, Angostura bitters, 2 scoops pebble ice.
  • Flash blend in a mixer for no more than 3 seconds.
  • Pour unfiltered into a Pearl Diver glass.
  • Top off with more pebble ice to make an ice mound.
  • Insert a straw.
  • Garnish with a flower or leaf.
